There is no tutorial on it that I have seen. If you have an ANSYS support contract you could ask support as they have lots of tutorials beyond those publicly available.

Yes, you can do it - but CFX has no built in solidification model so you have to develop it yourself. It is not for a beginner CFD person to attempt. It also depends on what physics you are trying to...
