I did a simulation from Workbench and in CFX Pre I defined as an "user point" the value of mass flow at a section.
This is an example of a simulation, but where are stored these results in the files?

The format of the res file is propriety so you are not going to find the details of where it is stored.

I suspect you are actually asking how can I get the raw data from the plot - In solver manager right click on the chart and select "Export Plot Variables". Alternately you can use the command line cfx5mondata to extract it.

FYI: the mass flows at the boundaries are also predefined monitors, check Plot Lines -> Flow -> <choose boundary> -> P-Mass Boundary Flow on <boundary>
