I'm curious on how much effect adding a lot of point monitors to my simulation will have. A few are certainly low impact, but what if I throw in several thousand to get a couple planes monitored downstream?

The best way is just to try it and see. I would think it depends on what you are calculating - just getting the pressure a point would be just low load, but integrating some complex function over a lot of elements would be a much higher load.
