Mesh extrusion and body-fitting technique

Hi! I am new to ANSYS. I am trying to mimic the pollutant dispersion in urban street canyon and exchange of pollutants into side buildings.
My question is:
How to extrude a mess throughout the region irrespective of the size of body lying on path??
and should i keep the solid buildings into domain or simply subtract the solid part from whole fluid domain??
Also, could you guys help me with the body-fitting technique of meshing?

Can we define a path for mesh extrusion in ansys meshing?
