There is a UDF Manual in FLUENT Documentation. If you do not have it, you can find it in this link: http://www.engres.odu.edu/Applicatio...df/udf/pdf.htm

There is a FLUENT 6.2 Tutorial Guide in this link: http://www.engres.odu.edu/Applicatio...g/main_pre.htm The 4th topic, Modeling Unsteady Compressible Flow ,involve something about using UDF. However,if you want to know that how to write UDF functions, you must read the whole FLUENT 6.3 UDF Manual.
