can anyone tell me, can FLUENT simulate the flow of liquid over a plate then can the thickness of the fluid be measured?

Yes, Its possible to calculate the thickness same fashion as that of 'Boundary layer thickness' calculaiton.Agin it depends upon the fluid type..
