Hello!

I need to build workstation for ansys cfx (80%) and ng nx software.(20%)


I decide to go with 1 E5-2683v3, 32 GB DDR4 2133 ECC RAM
Or better go with 6800K, 32 GB DDR4 3000 RAM
and overclock CPU to 4.2 GHz ?

Price for CPU almost the same.

So what is better :
More cores, low frec
Less cores, high frec

Since you seem to have no general problem with used or overclocked hardware: Swap the I7-6800k for an I7-5820k. It can be overclocked much better than its successor, especially when it comes to uncore frequency. Use a motherboard from Asus or ASRock that is advertised with an "OC-socket". It further enhances uncore overclocking potential. Be sure to use 4 DIMMs for those 32GB of memory.
Or to answer your question directly: less faster cores with more memory bandwidth are usually the better choice.

5820-k was out of stock, so i order 6800k

Here what i order so far:
CPU
6800K BOX ( for 3 year warranty)
CPU COOLING
Enermax Liqmax II 240
RAM
G.Skill Ripjaws V 16GB DDR4 16GVRB Kit
3200 CL16 (2x8GB) X2 ( for quad channel)
SSD for OS:
Corsair Force MP500 NVMe SSD M.2 240GB
PSU
Cooler Master GM-Series
G750M 750 Watt

for MOTHERBOARD i think better choose for me is ASUS SABERTOOTH X99 ( OC Socket and 5 years warranty)

for HDD i dunno, and videocard - maybe some cheap nvidia card (400+ CUDA cores)

"overclocked hardware"

is it bad for CFX?
I mean, CPU is not using OC all day long.
