mesh generation

whenever we mesh a model, what is the procedure to take the mesh size. how can we say that the mesh that we generate is correct. do we need to follow any principle that must be satisfied.

Meshing a model can be considered a kind of art of sculpture and depends of your experience besides the physics you'd like to solve with this model.
Most of the times your mesher (a good mesher) will produce "correct" meshes or an error (or warning) if it isn't possible to generate one. I guess your question is related to the quality of the mesh. Regarding mesh quality, your mesher (again) should be able to provide informations about some kind of mesh quality metrics (aspect ratio, edge ratio, minimal angle, Jacobian, etc...).
