Default Set temperature for solid Surfaces

Hi. I am modeling some surfaces with different material and temperatures (I mean the surface temperature) surrounded with air.
How can I assign different materials and surface temperature to see the effect of temperature difference on buoyancy?
How can I assign water for a surface and have air as the adjacency?
