viscous free surface flow past a ship hull

I am new in the CFD field, I decide to develop a program for calculation of "viscous free surface flow past a ship hull" in one year, I want to get more advice from you, can you help me? My question lies on: (1)which program lauguage is the best choice for this development? (2)should FVM for discretisation be preferable? (3)Should I use a multi-block grid for this complex geometries? (4)which method is adaptable to deal with free surface of a 3D case: VOF, Level Set or other? (5)what is different in discretisation for each item of a pseudo-compressibility method for continuity equation instead of pressure-correction method?
