Default Solving two fluids

Dear OF community,

I will soon start a project on OpenFOAM for my company. What they want me to model is a kind of dam fill with water and passing through a small channel ( I know it's not clear) and they want to put oil on top of this water to see if this oil pushes the water through this small channel.

My questions are :

- Does any one of you has any idea if there's a similar tutorial on the OpenFOAM folder or anywhere else ?
- How much do you think these kind of models take time (roughly speaking) ?
