You are right that symmetryPlane must be set for all variables if you use it on a patch. I'm unclear myself on why this boundary condition works so I'd be interested in any insight as well.

Zero gradient should be okay f

Zero gradient should be okay for the sides however try using symmetryPlane for the bottom.
