you shoud have a fiel for selecting the surface ...

In the "Split With" option, choose Surface Real
But it will work only if you have a real Volume.
If your volume is virtual, then it will be more...

you cannot split more than one volumes in one...

you cannot split more than one volumes in one split operation
You have to reproduce the split operation
But you could enable the "retain" option for preventing gambit to delete the surface you used...
