It's indeed awkward that the same mesh works with pimple but doesn't with interFoam. I suppose they run at different time steps and one of them simply "skips over" the bit of the mesh that causes...

I think multiphase/interDyMFoam is what you're looking for - it's a transient, multiphase solver for two phases solved using VOF method and dynamic mesh. MRF is a steady state approach so not good...
