hi,
I am doing my research (fluid induced vibration) using star ccm+, and I want to use composite materials for my pipe. I look to previous papers they use to define the laminate stiffness (A11,D11) , however I could not find a way to key-in those stiffness in starccm+.

STAR-CCM+'s solid mechanics abilities are not really advanced enough for this. You are better off using Abaqus for the solid mechanics and coupling it with STAR-CCM+ for the fluid physics.
