I am trying to accomplish a specific grid mesh, as shown in the attached picture, but since it consists of both triangles and parallelograms ANSYS Meshing won't do what I want by default. Does anyone know how I can get the mesh that I want?

Jacob, I don't understand what do you mean by "ANSYS Meshing won't do what I want by default". This meshing software gives less "control" to the user (compared to ICEM for instance), and if want a specific mesh type you need to specify it with various method/sizing/refinement, it can't read in the user's mind yet.

You can still change several default meshing parameters under Tools> Option> Meshing> Default Method and change Automatic( Patch Conforming/Sweeping) to another one.
