What is the best way to describe a liquid material?

As the title said, when I want to insert a new material of liquid in CFX, what is the beat way? General ? Table? Or what? The predefined liquid materials in CFX were described with NASA format or ZERO PRESSURE POLYNOMIAL format. But how could I get the parameters of the material that I want?

There is no general best way, you use the method which works best for your application. Many models do not need (or do not have) accurate material properties so constant viscosity and density is just fine. If you need variable viscosity or density then it depends on what material property data you have, what accuracy you need, numerical stability and lots of other factors.
