This is covered in the DesignModeller tutorials. Also, the Geometry and meshing forum is designed for DesignModeller questions.

Add material adds the new modeled part to the original geometry and you can do further modeling on it. Add frozen doesn't add the modeled part to original geometry and you can't do further modeling on it, except slicing.

Documentation explains everything, have you read it?
