Default wall adhesion and surface tension

Hi everybody.

I am simulating a water wheel at low rotational speed (1 rad/s). It is multiphase since it is in an open channel flow. I want to know the torque.

1) I have set 0.07 N/m the surface tension; it is right?
2) Have I also to click on wall adhesion? It is important?
3) There is a way to have in output a file with the time history of the torque (or the moment coefficient)? Because in output Fluent gives me only a file with the torque at the last time step and not its history during the whole simulation.
