Default Hardware configuration for CFD computations

Dear all,
Our faculty has to choose an hardware configuration for CFD computations using Fluent and OpenFoam.
The budget is around 5000 euros, but I think we can arrive up to 6000.
I was thinking to multi-channel CPUs (as the Epycs, with 8 channels) and around 128Gb of DDR4.

Can you plase provide us with some tips and specifications?
