I would recommend the book by Poinsot et al., which is a reference in the field I believe "Theoretical and Numerical Combustion". More generally I also like "Numerical Simulation of Reactive Flow" by Oran and Boris, about more general numerical reacting flow simulation.

Perhaps you should try "Computational Fluid Dynamics in Industrial Combustion" by Baukal et al. (2001).
