How should I set up symmetry boundary conditions on a plane patch without using symmetryPlane on the p, U, k, omega and nut fields?

its impossible
if you use symmetryPlane or symmetry for a patch it applies for all variables

a tricky way is to use slip for velocity and zeroGradient for scalar variables to work similar symmetry
