Are there any video resources through which we can learn the tutorials online. I'm not able to understand the in built tutorials very clearly.

not that I have ever seen, but they are worked through in detail in the documentation. are these not getting the job done for you?

Since I'm new, I'm not getting a good understanding of it.. In the DesignSweeps tut, I don't understand what an optimate is. I couldn't find any image directory as mentioned in the tut also...

its a way to optimize geometry based on a set of goals. If you are a newbie, it is probably beyond the scope of whatever you are trying to do. Do you have a need for this or are you just trying to learn the software?

I'm just trying to learn the software. I'm working on a project in my university which needs CFD simulations. I just want to learn to simulate and analyse flow over basic geometries and later air foils. Please suggest me an optimal way to do this.

Introduction
Mesh, Parts based meshing
Incompressible Flow Lid-Driven Cavity Flow

Than you can go to your specific topics, compressible flow or heat transfer, take 1 or 2 days you will have a good grasp,
